Lemon Meringue Cupcakes

The holiday period is an excellent time to have company over, and indeed within two days we were having two different groups of friends over. I thought I would make some nice lemon cupcakes for the occasion, as there were several lemon dessert lovers amongst the guests. Maple Meringue Frosting

    An earl grey chiffon cake with maple meringue frosting evidently calls for… maple meringue frosting. I thus made this lovely frosting recipe and was surprised by the fact that I could do it and furthermore that it was delicious (and not too sweet)! Frostings are usually not my forte, but this recipe is fail-proof and was just the right consistency for spreading. As a bonus, it is very glossy since it consists mostly of egg-whites, so very appealing on cakes.

Lemon Meringue Pie

This weekend I had my family, consisting of my parents and my two younger sisters, over for diner. In an attempt to reconcile my mom with my food and baked goods (she is admittedly not a huge fan of homemade goods), I decided to make the lemon meringue pie in Anna’s cookbook. This was perhaps a risky endeavour, as my mom adores lemon pie and would thus be an honest critic, and also… I do not like lemon pie (gasp!!).
